Masala Green Tea

A green tea masala: whole leaf green tea with lemongrass, peppermint, fennel seed, ginger, licorice root, cardamom, cinnamon, clove and black pepper. Brisk and lightly spiced. The lemongrass and peppermint keep it bright, the clove and ginger warm the finish, and the mulethi leaves a sweetness at the back without any sugar in it. Steep two to three minutes at around 80°C — water off the boil rather than boiling, or the green leaf turns bitter. Good on its own; it also takes milk if you want it closer to a chai.
